Christmas in Australia doesn’t usually scream EGGNOG! But, at Winter Wonderland we think we changed people’s opinion on the humble drink. Served chilled in our cute Grounds espresso cups, people were flocking to grab one of these Christmas treats.
So why not make this at home and impress family and friends who are coming round for the Christmas period with something a little different. We think the shaved nutmeg on top really adds a little special touch. Serve in small espresso glasses or mugs, or for those who love eggnog, go for something a little bigger.
Recipe:
Serves 6
1. In a heavy based pot gently heat the cream, milk, vanilla bean and spices (star anise pod, cinnamon stickers & nutmeg) until warm. Remove from the heat and cover with a lid for 30 minutes to infuse.
2. While you wait for your milk to infuse, in a stand mixer whisk the egg yolks and sugar until fluffy. Cover the egg whites and put in the fridge, you will need these later.
3. Once the milk has been infused, strain out the spices and vanilla pod then re-heat the milk (can use the same saucepan) until it starts to simmer (this is so you will cook the egg yolks when you put them into the egg yolk & sugar mixture).
4. Place the egg yolk and sugar mixture into a electric mixing bowl, then carefully pour the heated milk mixture into the bowl while the mixer is on a low speed.
5. Next add the rum and mix until combined.
6. Refrigerate overnight.
7. Just before serving, whisk/electric mix the egg whites until foamy and glossy, then fold into the mixture.
8. Finish off with a light dusting of grated nutmeg.
And there you have it, a delicious eggnog sure to keep everyone merry and festive.
